Hot Chocolate Protein Cake (vegetarian)

Ingredients

  • 3/4 cup oatmeal
  • 3 tbsp 100% cocoa powder
  • 3/4 cup pre cooked (5min) lentils
  • 2 bananas
  • 1 zucchini
  • 2 large tbsp peanut or almond butter
  • 2 large tbsp coconut oil
  • 3 large tbsp honey
  • 1/2 cup pumpkin seeds
  • 2 tsp cinnamon
  • 1 tsp turmeric
  • 1 tsp cayenne pepper
  • 1/2 tsp pink salt (optional)
  • 1 tsp baking soda
  • 3 hand full 65% chocolate chips

Process

  • Mix everything, except chocolate chips, in a food processor until smooth
  • Dip in baking cups/tray
  • Add chocolate chips
  • Bake 10-15min at 420F
  • Eat warm
  • Pairs well with mochi ice cream
  • Save in fridge and eat as a brownie once cooled down
